Fresh Fish Bibimbop

Fresh, raw fish is a light and healthy dish for any day. Bibimbop, or bibimbap, (비빔밥) is a Korean rice bowl mixed with various ingredients.  These bowls are most usually bright in color as they showcase an assortment of vegetables and protein. What’s great about bibimbop, is that you can add or withhold any ingredients according to your liking.

In this version of bibimbop, we use fresh sushi-grade tuna and salmon with plenty of sprouts and lettuce. This light and refreshing bowl is perfect for lunchtime in the Summer.

Ingredients

  • 1 Cup of rinsed Jasmine rice
  • Sushi grade tuna and salmon
  • Lettuce or Salad Green
  • 1.2 Cucumber (sliced)
  • 2 Cups of Water
  • Carrots (sliced)
  • Masago (fish roe)
  • Sesame Leaves
  • Bean sprouts
  • Seaweed
  • Sesame Oil
  • Sesame Seeds
  • Gochujand Chili Paste

Instructions

Preparation

  1. Set to high heat, close lid up to 12 minutes, until soft.
  2. Wash, clean, and dry all vegetable ingredients.
  3. Slice lettuce and julienne the cucumbers & carrots into small strips.
  4. Tightly roll sesame leaves, and slice into thin strips.
  5. Cut tuna and salmon into 1-inch cubes or smaller.

Arranging the Bowl

  1. Place a layer of rice on the bottom of the bowl
